Description

A delightful dish that balances the spicy kick of jalapeños with the sweet juiciness of fresh peaches, all enveloped in a glossy sauce over tender chicken.


Ingredients

  • 4 Chicken Breasts
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 2 Jalapeños, Diced
  • 3 Peaches, Diced
  • 1/4 Cup Honey
  • 1/4 Cup Apple Cider Vinegar
  • 1/4 Cup Water
  • 1 Tablespoon Cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and black pepper on both sides.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat until it shimmers. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add diced jalapeños and peaches. Cook for 2-3 minutes until softened.
  6. In a small bowl, whisk together honey, apple cider vinegar, water, and cornstarch until smooth.
  7. Pour the honey mixture over the sautéed jalapeños and peaches; stir gently and bring to a simmer.
  8. Return chicken to the skillet, spooning sauce over the top, and transfer the skillet to the oven.
  9. Bake for 20-25 minutes until chicken reaches 165°F (75°C).
  10. Let rest for a few minutes before serving hot with the sauce draped over the chicken.
