A delicious and cheesy Irish toastie that is perfect for a quick meal or snack.
Ingredients

- 4 slices of Irish soda bread
- 200g of Irish cheddar cheese, grated
- 50g of butter, softened
- 2 tablespoons of wholegrain mustard
- Salt and pepper to taste
Instructions
- Preheat your sandwich press or grill.
- Spread butter on one side of each slice of bread.
- On the unbuttered side, spread wholegrain mustard.
- Layer the grated cheddar cheese on two slices of bread.
- Top with the other two slices of bread, mustard side down.
- Grill the sandwich until golden brown and the cheese is melted, about 3-5 minutes.
- Remove from the grill, slice, and serve hot.
Notes
- Feel free to add additional ingredients like ham or tomatoes for extra flavor.
- For a spicier kick, add some sliced jalapeños.
- Serve with a side of pickles or a salad for a complete meal.
