Description

A vibrant side dish of roasted carrots glazed with honey, garlic, and butter, perfect for holiday feasts or weeknight dinners.


Ingredients

  • 2 pounds fresh carrots, peeled and sliced
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or aluminum foil.
  3. Peel the carrots and slice them into uniform pieces, about 2-3 inches long.
  4. In a small mixing bowl, whisk together the melted butter, honey, minced garlic, olive oil, salt, and pepper.
  5. Place the carrots onto the prepared baking sheet and pour the glaze over them. Toss to coat.
  6. Spread the carrots in a single layer and roast for 20-25 minutes, flipping halfway through.
  7. Remove from the oven and garnish with freshly chopped parsley before serving.

Notes

For a sweeter garlic flavor, consider roasting the garlic cloves alongside the carrots. Can be made ahead and stored in the fridge.
