- 2 pounds fresh carrots, peeled and sliced
- 3 tablespoons unsalted butter, melted
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (optional garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper or aluminum foil.
- Peel the carrots and slice them into uniform pieces, about 2-3 inches long.
- In a small mixing bowl, whisk together the melted butter, honey, minced garlic, olive oil, salt, and pepper.
- Place the carrots onto the prepared baking sheet and pour the glaze over them. Toss to coat.
- Spread the carrots in a single layer and roast for 20-25 minutes, flipping halfway through.
- Remove from the oven and garnish with freshly chopped parsley before serving.
Notes
For a sweeter garlic flavor, consider roasting the garlic cloves alongside the carrots. Can be made ahead and stored in the fridge.
