- 1 cup fresh cranberries
- 1/2 cup honey
- 1 cup ricotta cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, place the chicken breasts and season with salt and pepper.
- In a bowl, mix together honey and cranberries, then pour over the chicken.
- Spoon ricotta cheese over the top of the chicken and cranberries.
- Drizzle olive oil over the dish.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- Garnish with fresh thyme before serving.
Notes
- For a sweeter dish, add more honey.
