Description

A nutritious and delicious meal featuring tender chicken and sweet potatoes, perfect for a healthy diet.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. While the sweet potatoes are roasting, season the chicken breasts with salt, pepper, and any additional spices you prefer.
  5. In a skillet over medium heat, cook the chicken for 6-7 minutes on each side until fully cooked.
  6. In the last 5 minutes of cooking, add the broccoli florets to the skillet to steam.
  7. Once everything is cooked, assemble the bowls by placing sweet potatoes, chicken, and broccoli together.
  8. Garnish with fresh parsley before serving.

Notes

  • Feel free to add other vegetables like bell peppers or spinach.
