- 2 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup broccoli florets
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- While the sweet potatoes are roasting, season the chicken breasts with salt, pepper, and any additional spices you prefer.
- In a skillet over medium heat, cook the chicken for 6-7 minutes on each side until fully cooked.
- In the last 5 minutes of cooking, add the broccoli florets to the skillet to steam.
- Once everything is cooked, assemble the bowls by placing sweet potatoes, chicken, and broccoli together.
- Garnish with fresh parsley before serving.
