Description

A delicious Grilled Steak Bowl featuring juicy steak and tender grilled zucchini, drizzled with a flavorful sauce.


Ingredients

  • 1 lb steak (sirloin, ribeye, or flank)
  • 2 medium zucchinis
  • 2 tbsp olive oil
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • Salt and pepper to taste

Instructions

  1. Marinate the steak: In a mixing bowl, whisk together soy sauce, minced garlic, grated ginger, and honey. Add the steak, ensuring it’s fully coated. Cover and let marinate for at least 30 minutes, or up to overnight in the refrigerator.
  2. Prep the zucchini: While the steak marinates, wash and slice the zucchinis into half-inch thick planks. Brush them lightly with olive oil, sprinkling with salt and pepper to taste.
  3. Preheat the grill: Fire up your grill to medium-high heat.
  4. Grill the steak: Remove the steak from the marinade, letting excess drip off. Place it on the hot grill, cooking 4-5 minutes on each side.
  5. Grill the zucchini: Once the steak has grilled for about 8 minutes total, place the zucchini on the grill, cooking for roughly 3-4 minutes on each side.
  6. Prepare your sauce: While the steak rests, mix any leftover marinade with a bit of water in a saucepan. Simmer for about 5 minutes until thickened.
  7. Assemble the bowl: Slice the seasoned steak into thin strips and layer over cooked rice or quinoa. Add the grilled zucchini for crunch, drizzling with your flavorful sauce.
  8. Serve and enjoy: Garnish with chopped scallions or sesame seeds if desired.
