Description

A vibrant bowl featuring grilled shrimp with creamy avocado, zesty corn salsa, and a rich garlic sauce.


Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 1 avocado, sliced or mashed
  • 1 cup frozen corn, thawed
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Lime juice, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Toss the shrimp with olive oil, paprika, garlic powder, salt, pepper, and optional cayenne. Marinate for at least 30 minutes.
  2. Mix the corn salsa by combining corn, red onion, cilantro, lime juice, and a sprinkle of salt, and let it marinate.
  3. Preheat the grill to medium heat.
  4. Grill the shrimp for 2-3 minutes per side until pink and opaque.
  5. Whisk together mayonnaise, sour cream, cilantro, lime juice, salt, and pepper for the creamy garlic sauce.
  6. Assemble the bowls with corn salsa, grilled shrimp, avocado, and drizzle with creamy garlic sauce.

Notes

Make-ahead options for corn salsa and creamy sauce are recommended. Use an air fryer if grilling isn’t available.
