- 1 lb. large shrimp, peeled and deveined
- 1 avocado, sliced or mashed
- 1 cup frozen corn, thawed
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- Lime juice, to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Toss the shrimp with olive oil, paprika, garlic powder, salt, pepper, and optional cayenne. Marinate for at least 30 minutes.
- Mix the corn salsa by combining corn, red onion, cilantro, lime juice, and a sprinkle of salt, and let it marinate.
- Preheat the grill to medium heat.
- Grill the shrimp for 2-3 minutes per side until pink and opaque.
- Whisk together mayonnaise, sour cream, cilantro, lime juice, salt, and pepper for the creamy garlic sauce.
- Assemble the bowls with corn salsa, grilled shrimp, avocado, and drizzle with creamy garlic sauce.
