Description

A vibrant and comforting Mediterranean dish featuring succulent grilled chicken, fresh vegetables, and creamy tzatziki.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/4 cup lemon juice
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red onion, sliced
  • 1/2 cup feta cheese, crumbled
  • 2 cups cooked quinoa or rice
  • For Tzatziki: 1 cup Greek yogurt, 1/2 cucumber grated (squeeze out excess water), 1 clove garlic, minced, 2 tablespoons lemon juice, 1 tablespoon fresh dill

Instructions

  1. Marinate the Chicken: Combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper in a mixing bowl. Add chicken and let marinate for at least 30 minutes.
  2. Cook the Chicken: Preheat grill or oven. Grill chicken 6-8 minutes per side or bake until cooked through. Allow to rest before slicing.
  3. Prepare the Tzatziki Sauce: Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill in a medium bowl. Season with salt and pepper.
  4. Assemble the Bowls: Start with quinoa or rice, add sliced chicken, and top with vegetables and feta.
  5. Drizzle with Tzatziki: Garnish generously with tzatziki sauce.
