Scale
  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon

  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 2 cups powdered sugar
  • 2 tablespoons meringue powder
  • Water (as needed for icing)

  2. In a separate bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add molasses and egg to the butter mixture and mix until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Chill the dough for at least 1 hour in the refrigerator.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the dough on a floured surface to about 1/4 inch thick.
  8. Cut out shapes using cookie cutters and place them on a baking sheet.
  9. Bake for 8-10 minutes or until the edges are firm.
  10. Let the cookies cool completely before decorating with royal icing.
  11. To make royal icing, mix powdered sugar, meringue powder, and water until smooth and stiff peaks form.
  12. Decorate the cooled cookies with royal icing as desired.

Notes
