- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/4 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the halved baby potatoes on top of the chicken.
- In a bowl, mix together the melted butter, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken and potatoes in the crockpot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- For a creamier sauce, you can add a splash of heavy cream before serving.
- Feel free to add other vegetables like carrots or green beans for more variety.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
