Description

  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • Zest of 1 large lemon
  • Juice of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 8 ounces burrata cheese, torn into chunks
  • Fresh basil leaves or parsley, chopped (optional)
  • Grated Parmesan cheese (optional)
  • Red pepper flakes (optional)

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add the linguine or fettuccine and cook according to package instructions, usually for about 8-10 minutes, until al dente. Reserve about 1 cup of the starchy pasta water before draining.
  2. Prepare the Asparagus: Trim asparagus and cut into 2-inch pieces.
  3. Sauté the Garlic and Asparagus: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until aromatic, about 1-2 minutes. Add asparagus pieces and cook for 4-5 minutes.
  4. Incorporate Lemon: Stir in lemon zest and juice, seasoning with salt and pepper. Cook for another 1-2 minutes.
  5. Combine Pasta and Asparagus: Add the drained pasta to skillet, toss to combine. Add reserved pasta water gradually if more moisture is needed.
  6. Finish with Burrata: Transfer pasta to serving dishes and top with torn burrata.
  7. Garnish and Serve: Finish with herbs, red pepper flakes, and Parmesan if desired. Serve immediately.

Notes

For a smoky flavor, try grilling the asparagus. Substitute burrata with ricotta or feta if preferred.
