Description

A refreshing and vibrant salad featuring penne pasta, feta cheese, cranberries, and a zesty orange vinaigrette.


Ingredients

  • 8 oz penne pasta
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely chopped
  • 1/4 cup walnuts, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled penne pasta, feta cheese, cranberries, red onion, walnuts, and parsley.
  3. In a separate bowl, whisk together the olive oil, orange juice, apple cider vinegar, honey, salt, and pepper to create the vinaigrette.
  4. Pour the vinaigrette over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
