- 1 package of gnocchi
- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon sage, dried
- Salt and pepper to taste
Instructions
- Cook the gnocchi according to package instructions and set aside.
- In a large skillet, sauté the minced garlic in a bit of olive oil until fragrant.
- Add the pumpkin puree and heavy cream to the skillet, stirring to combine.
- Stir in the grated Parmesan cheese and dried sage, and season with salt and pepper.
- Let the sauce simmer for a few minutes until heated through.
- Toss the cooked gnocchi in the pumpkin sauce until well coated.
- Serve warm, garnished with additional Parmesan if desired.
Notes
- For a vegan version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
