Description

Ingredients

  • 1 and 1/2 cups chocolate cookie crumbs
  • 6 tablespoons butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/2 cup heavy cream
  • 6 oz dark chocolate, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 and 1/2 cups cherry pie filling or cherry compote
  • Optional chocolate shavings or cacao nibs for garnish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine chocolate cookie crumbs and melted butter in a mixing bowl. Press into the base of a springform pan and bake for 10 minutes, then cool.
  3. Beat cream cheese and sugar until smooth. Mix in sour cream, heavy cream, and vanilla, then incorporate melted dark chocolate.
  4. Add eggs one at a time, mixing gently until just combined.
  5. Pour the batter into the cooled crust and tap to release air bubbles.
  6. Bake in a water bath for 55–65 minutes or until the center slightly jiggles.
  7. Cool in the oven for an hour, then chill in the fridge for at least 6 hours.
  8. Top with cherry pie filling and garnish with chocolate shavings if desired.

Notes

For best results, use room temperature ingredients and avoid overmixing. Make-ahead tips: cheesecake can be prepared a day in advance.
