- 1 and 1/2 cups chocolate cookie crumbs
- 6 tablespoons butter, melted
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup sour cream
- 2 large eggs
- 1/2 cup heavy cream
- 6 oz dark chocolate, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 and 1/2 cups cherry pie filling or cherry compote
- Optional chocolate shavings or cacao nibs for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Combine chocolate cookie crumbs and melted butter in a mixing bowl. Press into the base of a springform pan and bake for 10 minutes, then cool.
- Beat cream cheese and sugar until smooth. Mix in sour cream, heavy cream, and vanilla, then incorporate melted dark chocolate.
- Add eggs one at a time, mixing gently until just combined.
- Pour the batter into the cooled crust and tap to release air bubbles.
- Bake in a water bath for 55–65 minutes or until the center slightly jiggles.
- Cool in the oven for an hour, then chill in the fridge for at least 6 hours.
- Top with cherry pie filling and garnish with chocolate shavings if desired.
