Description

Ingredients

  • 1.5 lbs baby potatoes (Yukon gold or red)
  • 23 tbsp olive oil
  • 2 tbsp unsalted butter, melted (optional)
  • 3 cloves garlic, minced
  • 1/3 cup freshly grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried herbs (rosemary, thyme, parsley, or Italian blend)
  • Optional garnish: chopped fresh parsley and extra parmesan

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Boil the baby potatoes in salted water for about 15-20 minutes until fork-tender.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet, spaced evenly.
  5. Use a fork or potato masher to smash them to about 1/2 inch thick.
  6. Drizzle with olive oil and melted butter.
  7. Sprinkle with minced garlic, salt, black pepper, and dried herbs.
  8. Top with grated parmesan cheese.
  9. Bake for 20-25 minutes or until golden and crispy.
  10. Garnish with fresh parsley and extra parmesan before serving.
