- 8 oz spaghetti or fettuccine
- 1 cup ripe tomatoes, diced
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil salted water in a large pot, add the pasta and cook until al dente. Drain and set aside, saving a cup of pasta water.
- Sauté the Garlic: In a skillet, heat olive oil over medium heat, then add minced garlic and sauté until golden brown.
- Simmer the Tomatoes: Add diced tomatoes, salt, and pepper. Simmer for about 5 minutes until tomatoes soften.
- Add the Cream: Lower heat and stir in heavy cream. Adjust seasoning.
- Combine with Pasta: Toss cooked pasta into the sauce, mixing thoroughly. Add reserved pasta water if sauce is too thick.
- Garnish and Serve: Plate the pasta, top with chopped basil and grated Parmesan cheese. Enjoy!
