Description

Indulge in creamy tomato garlic pasta, a comforting dish with a rich sauce of ripe tomatoes, garlic, and heavy cream.


Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 cup ripe tomatoes, diced
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water in a large pot, add the pasta and cook until al dente. Drain and set aside, saving a cup of pasta water.
  2. Sauté the Garlic: In a skillet, heat olive oil over medium heat, then add minced garlic and sauté until golden brown.
  3. Simmer the Tomatoes: Add diced tomatoes, salt, and pepper. Simmer for about 5 minutes until tomatoes soften.
  4. Add the Cream: Lower heat and stir in heavy cream. Adjust seasoning.
  5. Combine with Pasta: Toss cooked pasta into the sauce, mixing thoroughly. Add reserved pasta water if sauce is too thick.
  6. Garnish and Serve: Plate the pasta, top with chopped basil and grated Parmesan cheese. Enjoy!

Notes

You can prepare the sauce in advance and store it in the fridge for up to 3 days.
