Description

A comforting and creamy soup combining the flavors of classic tacos, perfect for busy weeknights and gatherings.


Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat for 5-7 minutes. Drain excess fat.
  2. Add black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Stir everything together.
  3. Bring the mixture to a gentle boil, then reduce heat and let it simmer uncovered for 20 minutes.
  4. Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
  5. Taste and adjust seasoning with salt and pepper.
  6. Ladle the soup into bowls and garnish with chopped cilantro before serving.

Notes

Make the soup a day in advance for enhanced flavors. Can be made in an Instant Pot for quicker preparation.
