- 1 lb ground beef or turkey
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, brown the ground beef or turkey over medium heat for 5-7 minutes. Drain excess fat.
- Add black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Stir everything together.
- Bring the mixture to a gentle boil, then reduce heat and let it simmer uncovered for 20 minutes.
- Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
- Taste and adjust seasoning with salt and pepper.
- Ladle the soup into bowls and garnish with chopped cilantro before serving.
Notes
Make the soup a day in advance for enhanced flavors. Can be made in an Instant Pot for quicker preparation.
