Description

A delicious and creamy pasta salad featuring sweet corn, perfect for summer gatherings.


Ingredients

  • 8 oz pasta
  • 2 cups corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup lime juice
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the corn, mayonnaise, sour cream, lime juice, red onion, cilantro, chili powder, salt, and pepper.
  3. Add the cooled pasta to the bowl and mix until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve cold and enjoy!

Notes

  • Feel free to add diced bell peppers for extra crunch.
