- 8 oz pasta (fettuccine or linguine)
- 2 salmon fillets
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 2 cloves garlic, minced
- Salt and pepper to taste
- Lemon juice (optional, for serving)
Instructions
- Cook the pasta in salted boiling water until al dente, then drain and reserve some pasta water.
- In a skillet, heat olive oil and cook seasoned salmon for 4-5 minutes on each side until flaky. Remove and flake into chunks.
- Sauté minced garlic in the same skillet, then add spinach until wilted.
- Stir in heavy cream and Parmesan cheese until melted, adding pasta water for consistency if needed.
- Add the flaked salmon and cooked pasta, tossing everything together and seasoning with salt and pepper. Serve warm with a squeeze of lemon juice if desired.
Notes
Make ahead by pre-cooking the pasta or preparing the sauce in advance. Store leftovers in an airtight container for up to three days.
