Description

A tropical dish that combines succulent chicken, creamy coconut sauce, and fluffy rice, brightened with zesty lime and fresh cilantro.


Ingredients

  • 1 lb chicken breasts, diced
  • 1 cup rice (jasmine or basmati)
  • 1 can coconut milk
  • 1 cup chicken broth
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 cup cilantro, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the diced chicken breasts and sprinkle with salt and pepper. Sear until golden and cooked through, about 5-7 minutes.
  2. Stir in the rice and cook for an additional minute to absorb flavors.
  3. Pour in the coconut milk, chicken broth, lime juice, and lime zest. Bring to a gentle simmer.
  4. Reduce heat to low, cover, and let simmer for about 15-20 minutes.
  5. Remove from heat and stir in the freshly chopped cilantro before serving.

Notes

You can make this dish vegetarian by using firm tofu or chickpeas instead of chicken. For added flavor, consider tossing in vegetables or spices as desired.
