- 1 can coconut milk

- 1 cup cilantro, chopped

- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the diced chicken breasts and sprinkle with salt and pepper. Sear until golden and cooked through, about 5-7 minutes.
- Stir in the rice and cook for an additional minute to absorb flavors.
- Pour in the coconut milk, chicken broth, lime juice, and lime zest. Bring to a gentle simmer.
- Reduce heat to low, cover, and let simmer for about 15-20 minutes.
- Remove from heat and stir in the freshly chopped cilantro before serving.
