Instructions
- In a mixing bowl, combine almond flour, shredded coconut, honey (or maple syrup), almond butter, vanilla extract, and salt.
- Mix until all ingredients are well combined and form a sticky dough.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
