Description

Coconut Almond Energy Balls are a delicious and nutritious snack that provides a quick energy boost, perfect for busy days.


Ingredients

  • 1/2 cup shredded coconut
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, combine almond flour, shredded coconut, honey (or maple syrup), almond butter, vanilla extract, and salt.
  2. Mix until all ingredients are well combined and form a sticky dough.
  3. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
