Description

Cinnamon Sugar Pumpkin Bites are delightful, bite-sized treats that combine the warm flavors of cinnamon and pumpkin, perfect for any fall gathering or as a sweet snack.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 cup sugar (for coating)
  • 1 tbsp cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, sugar, and brown sugar until smooth.
  3. Add the pumpkin puree and eggs, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a cookie scoop, drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. In a small bowl, mix together the sugar and cinnamon for coating.
  8. Roll each dough ball in the cinnamon sugar mixture before placing it back on the baking sheet.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow to cool on a wire rack before serving.

Notes

  • Store in an airtight container for up to a week.
  • These bites can be frozen for up to 3 months.
  • For a richer flavor, use dark brown sugar instead of light brown sugar.
