A quick and healthy chicken zucchini stir fry that is perfect for a weeknight dinner.

- 1 lb chicken breast, sliced
- 2 medium zucchinis, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced chicken breast and cook until browned.
- Add minced garlic and cook for another minute.
- Add sliced zucchinis and bell pepper to the skillet.
- Pour in soy sauce and stir well.
- Cook for an additional 5-7 minutes until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
