Description

A delicious and creamy cheesy sweet potato casserole that is perfect for any occasion.


Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add the cream cheese, milk, melted butter, brown sugar, vanilla extract, cinnamon, salt, and pepper to the mashed sweet potatoes and mix until smooth.
  5. Fold in the shredded cheddar cheese.
  6. Transfer the mixture to a greased baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until heated through and slightly golden on top.

Notes

  • For a crunchy topping, consider adding crushed crackers or breadcrumbs on top before baking.
  • This dish can be made ahead of time and reheated before serving.
  • Feel free to adjust the sweetness by adding more or less brown sugar.
