- 1 medium cauliflower, cut into florets
- 1 cup pumpkin puree
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, steam the cauliflower florets until tender, about 5-7 minutes.
- In a mixing bowl, combine pumpkin puree, milk, garlic, salt, pepper, paprika, and nutmeg.
- Add the steamed cauliflower to the pumpkin mixture and stir to combine.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheese and grated Parmesan.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a spicier kick, add red pepper flakes to the mixture.
- This dish can be made ahead of time and reheated before serving.
