Description

A delicious and comforting dish combining the flavors of pumpkin and cauliflower with a cheesy topping.


Ingredients

  • 1 medium cauliflower, cut into florets
  • 1 cup pumpkin puree
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, steam the cauliflower florets until tender, about 5-7 minutes.
  3. In a mixing bowl, combine pumpkin puree, milk, garlic, salt, pepper, paprika, and nutmeg.
  4. Add the steamed cauliflower to the pumpkin mixture and stir to combine.
  5. Transfer the mixture to a greased baking dish.
  6. Top with shredded cheese and grated Parmesan.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
