Description

A savory and sweet dish featuring tender braised beef cooked with apples and onions, perfect for a comforting meal.


Ingredients

  • 2 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 2 apples, cored and sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon fresh thyme
  • 1 tablespoon brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the beef with salt and pepper, then sear on all sides until browned.
  4. Remove the beef and set aside. In the same pot, add onions and cook until softened.
  5. Add garlic and cook for an additional minute.
  6. Stir in apples, thyme, and brown sugar, cooking for a few minutes.
  7. Return the beef to the pot and pour in the beef broth.
  8. Cover and transfer to the oven, braising for 2.5 to 3 hours until the beef is tender.
  9. Remove from the oven and let rest before slicing.

Notes

  • For a richer flavor, use a full-bodied red wine in place of some of the beef broth.
  • Serve with mashed potatoes or crusty bread to soak up the juices.
  • This dish can be made a day ahead and reheated for better flavor.
