- 2 lbs beef chuck roast
- 2 tablespoons olive oil
- 2 large onions, sliced
- 2 apples, cored and sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon fresh thyme
- 1 tablespoon brown sugar
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (163°C).
- In a large Dutch oven, heat olive oil over medium-high heat.
- Season the beef with salt and pepper, then sear on all sides until browned.
- Remove the beef and set aside. In the same pot, add onions and cook until softened.
- Add garlic and cook for an additional minute.
- Stir in apples, thyme, and brown sugar, cooking for a few minutes.
- Return the beef to the pot and pour in the beef broth.
- Cover and transfer to the oven, braising for 2.5 to 3 hours until the beef is tender.
- Remove from the oven and let rest before slicing.
Notes
- For a richer flavor, use a full-bodied red wine in place of some of the beef broth.
- Serve with mashed potatoes or crusty bread to soak up the juices.
- This dish can be made a day ahead and reheated for better flavor.
