  • 1/2 cup shelled pistachios

  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the salad greens, ensuring all dirt is removed. Use a salad spinner to dry them or pat dry with a towel.
  2. Prepare the blueberries by rinsing them in cold water and removing any stems.
  3. Chop the shelled pistachios into smaller pieces.
  4. Crumble the feta cheese into bite-sized pieces.
  5. Slice the red onion into thin rings.
  6. In a small bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper until smooth.
  7. In a large salad bowl, combine the dried greens, blueberries, chopped pistachios, crumbled feta, and sliced onion.
