- 3–4 large russet potatoes
- 4 tablespoons olive oil
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 2 teaspoons Italian seasoning
- ½ cup shredded Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a large baking sheet.
- Slice the potatoes into wedges, aiming for uniform thickness.
- In a large bowl, combine the potato wedges with olive oil and toss until well coated.
- In a small bowl, mix together salt, garlic powder, and Italian seasoning. Sprinkle over the potato wedges and toss with Parmesan cheese.
- Arrange the seasoned wedges in a single layer on the prepared baking sheet.
- Bake for 25-35 minutes, turning halfway through, until golden brown and fork-tender. Broil for an extra minute for added crunch if desired.
- Serve hot, optionally garnished with fresh parsley.
Notes
For extra crispness, soak the potato wedges in water for 30 minutes before baking. Store leftovers in an airtight container for up to three days.
