Description

Apple Butter Whoopie Pies are a delightful fall treat, combining the rich flavors of apple butter with soft, cake-like cookies, sandwiched together with a creamy filling.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup apple butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the apple butter, eggs, and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  8. For the filling, mix powdered sugar and milk until smooth. Spread or pipe the filling onto the flat side of one cookie and sandwich with another cookie.
