- 1/2 cup apple butter
- 1/2 cup sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1 tsp baking powder

- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the apple butter until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Frost the cooled cupcakes with the cream cheese frosting.
Notes
- Store cupcakes in an airtight container in the refrigerator for up to 5 days.
- For a spiced version, add a pinch of nutmeg to the batter.
- These cupcakes can be frozen for up to 3 months without frosting.
