Description

Deliciously moist apple butter cupcakes topped with creamy cream cheese frosting, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup apple butter
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the apple butter until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fill the cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. For the frosting, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  11. Frost the cooled cupcakes with the cream cheese frosting.

Notes

  • Store cupcakes in an airtight container in the refrigerator for up to 5 days.
  • For a spiced version, add a pinch of nutmeg to the batter.
  • These cupcakes can be frozen for up to 3 months without frosting.
